One Pot No Chicken Chow Mein

One-Pot ‘No Chicken’ Chow Mein

Yield: 5 servings

‘No Chicken’ Chow Mein… rolls off the tongue, doesn’t it? 😉 It’s actually even better when you put it ON your tongue. Bust out that wok, and get cookin’!

Ingredients

MARINADE

  • 1/4 cup soy sauce
  • 1 tablespoon ginger, minced
  • 1 tablespoon garlic, minced
  • 1 tablespoon sesame oil
  • 1 tablespoon sugar
  • ¼ teaspoon red pepper flakes
  • pepper, pinch
  • 1 package Comrade Cluck ‘No Chicken’
  • ½ onion, julienned
  • 3 stalks celery, sliced
  • 4 carrots, julienned
  • 3 cups cabbage, shredded
  • 2 packages ramen noodles, without seasoning packet
  • 1 ½ cups no-chicken broth

GARNISH

  • scallions, diced

The How-To

  1. In a bowl, mix soy sauce, ginger, garlic, sesame oil, sugar, red pepper flakes, and pepper together. Set aside.
  2. Add sesame oil to the bottom of the pot and add Comrade Cluck ‘No Chicken’, crumbling it into pieces as you add it.
  3. Cook Comrade Cluck over medium-high heat, according to package instructions.
  4. Pour prepared sauce over Comrade Cluck, reduce heat to low and cook 1 minute.
  5. Remove Comrade Cluck from the pot.
  6. Add a drizzle of sesame oil to the bottom of the pot and add the onion, celery, carrots, and cabbage. Sauté until the onions are translucent.
  7. Place both of the ramen noodle bricks into the bottom of the pot.
  8. Pour in no-chicken broth over the noodles.
  9. Cover the noodles with the vegetables as much as possible. Cover the pot with a lid and simmer for 5-7 minutes or until the noodles are cooked through.
  10. Break up the noodles and add cooked Comrade Cluck back to the pot
  11. Garnish with scallions.
  12. Enjoy!
