Loaded Stallion Dogs

Yield: as many as you want!

How many tries does it take until you find your favorite way to eat The Stallion Italian ‘Sausage’? Trick question: they’re all freakin’ amazing! We couldn’t settle on just one loaded Italian ‘sausage’ recipe, so you get them ALL.

Ingredients

  • (at least) 1 12-oz. package of The Stallion, casings removed
  • Hot dog or hoagie buns

Peppers & Onions:

  • Bell peppers, sliced & sautéed
  • Yellow onion, sliced & sautéed
  • Vegan drizzle sauce of choice: Sriracha mayo, Yum Yum sauce, “honey” mustard
  • If using “honey” mustard, combine: 1 tablespoon agave, 1/3 cup vegan mayonnaise, 1 tablespoon whole grain mustard, & 1 teaspoon soy sauce

The Kale:

  • 1 small pat vegan butter
  • 1 tablespoon olive oil
  • 1 small bunch kale (red Russian), chopped
  • 1/2 red onion, sliced thin
  • 1 garlic clove, minced
  • 1/4 cup red wine vinegar
  • 1/4 cup no-chicken broth
  • Pinch of red pepper flakes
  • Drizzle of light agave syrup
  • Drizzle of balsamic vinegar

Italian Style:

  • 1/2 cup vegan mayonnaise
  • 1 cup fresh basil leaves & soft stems, packed (~1.25 ounces)
  • 1 medium lemon, zested
  • 2 cloves garlic
  • 1/2 teaspoon coarse kosher salt
  • 1/2 teaspoon ground black pepper
  • Heaping 1/2 cup castelvetrano olives, pitted (~5 ounces)
  • 1/2 cup giardiniera, drained (mild or hot)
  • 1/4 cup capers, drained

Yum Yum Slaw:

  • Homemade slaw: we suggest a vinegar-based one made with purple cabbage, carrots, & red bell pepper
  • Vegan Yum Yum sauce

Onion & Cheddar:

  • Yellow onions, sliced & caramelized
  • Vegan cheddar cheese

The How-To

  1. Prepare The Stallion links according to package instructions, & set aside.
  2. Toast those buns, if you’re feeling feisty.
  3. Place The Stallion links into buns and load ’em up with your combo(s) of choice!

The Kale:

  1. Heat oil and butter over medium heat in a pan.
  2. Add in the rest of the ingredients and sauté to desired softness.
  3. Add more sautéed red onion on top!

Italian Style:

  1. Add ingredients from vegan mayo through black pepper to a food processor. Process until combined into a smooth mixture, then set aside.
  2. Place olives, giardiniera, and capers into same food processor (no need to even wash it!). Pulse only 3-5 times, just until roughly chopped.

Onion & Cheddar:

  1. Place vegan cheddar and caramelized onions on your Stallion dog & either toast in a toaster oven or broil for a few minutes to make cheese all melty.
