Loaded BBQ Potato Skins

Full Disclosure: There were two things that surprised us about this recipe: 1) It was slightly more labor-intensive than we were anticipating. 2) It slapped way harder than we expected it to, making the unforeseen prep oh so worth it. ⁠

Ingredients

1 package Pit Boss Pulled ‘Pork’
8
small potatoes
olive oil
kosher salt
2 tablespoons plant-based butter, melted
1 cup shredded plant-based cheese
1/4 cup BBQ sauce
1/3 cup plant-based sour cream
3 green onions chopped

The How-To

  1. Preheat the oven to 400°F and line a baking pan with parchment paper.
  2. Slice the potatoes in half lengthwise. Using a pastry brush or basting brush, coat all sides of the sliced potato with olive oil.
  3. Place the potatoes cut-side down on the baking sheet and sprinkle generously with kosher salt.
  4. Bake for 25 to 30 minutes or until cooked through. Remove from the oven and allow to cool enough to handle.
  5. Using a large spoon, scoop out the majority of the potato, leaving about a 1/3 of an inch.
  6. Increase the oven temperature to 475°F.
  7. Place the potatoes back on the pan, cut side up.
  8. Brush them with the melted butter.
  9. Bake for an additional 8 to 10 minutes. This will help firm them up so they won’t fall apart. Remove from the oven.
  10. Fill the potatoes with No Evil Foods vegan pulled pork, Pit Boss, and sprinkle with cheese.
  11. Return to the oven for about 5 minutes or until the cheese is melted.
  12. Finish it off with a drizzle of BBQ, dollop of sour cream, and a sprinkle of chopped green onions.
