Italian Pasta Salad

Yield: Serves 2-4

Be the hero of your next potluck with this flavor-packed orzo salad studded with sundried tomatoes, capers, parsley, and diced cubes of The Stallion, our boldy spiced Italian sausage. If you’re gonna go pasta salad, go big.


  • 2 Stallion Links, diced
  • ½lb orzo
  • 7 oz sundried tomatoes, chopped
  • 3.5 oz capers
  • 1 lemon
  • Pinch of parsley
  • Splash of white wine or vegetable stock
  • Oil of choice
  • Salt & Pepper

The How-To

  1. Cook orzo according to package instructions, set aside.
  2. Sauté diced Stallion in oil until browned. Add sundried tomatoes, sauté for about 3 minutes to soften. Add capers and a splash of wine. Remove from heat and add lemon juice.
  3. Combine sauce, orzo, and parsley. Season to taste with salt and pepper.
  4. Serve immediately or cold.
