Holiday Roasted Veggies

Yield: serves 4

Give your oven something to celebrate with a pan of herb-roasted veggies. It’s a one-pan crowd pleaser that’ll feed the whole damn family.


  • 3 large potatoes, large chunks
  • 1 large carrot, large chunks
  • 1 large yellow onion, large chunks
  • 1 T dried thyme
  • Oil of choice
  • Salt & Pepper
  • Fresh rosemary

The How-To

  1. Coat veggies in oil, thyme, and salt & pepper. Roast at 375 for 15 to 25 minutes.
  2. Serve with The Pardon and Golden Gravy.
