Golden Gravy

Pro Tip: Save your sanity and prep this gravy up to 5 days ahead, storing in the refrigerator. Gently reheat before serving.


  • ‘Better than Bouillon’ No-Chicken Base OR 4 cups full-flavored vegetable stock
  • 1/4 cup vegan butter or choice of oil
  • 1 shallot, minced (optional)
  • 1/2 cup all-purpose flour
  • 2 tsp white miso
  • 2-4 tbsp nutritional yeast
  • Salt & pepper (to taste)

The How-To


  1. Measure stock of choice and set aside.
  2. Add vegan butter or oil of choice to medium sauce pan & melt over medium heat.
  3. Add minced shallot (if using) to pan and cook until clear.
  4. Slowly add 1/2 cup of flour to butter/shallot mixture, whisking approximately 2 minutes.
  5. Gradually add the broth to the butter/flour mixture. Don’t stop whisking until it’s all in!
  6. Add miso, nutritional yeast, and freshly ground black pepper.
  7. Bring gravy to a boil, then lower heat and simmer until thick.
