Chicken Pad Thai Jar

Yield: 3 quarts

This lunch is just as fun to make as it is to eat! Get out your spiralizer and build yourself a clean and colorful meal packed with the protein and nutrients you need to take on the day.

Ingredients

● 10 oz Comrade Cluck

● 1.5 cup almond pad Thai sauce (see recipe below)

● 2 medium zucchinis, spiralized

● 1 large sweet potato, spiralized

● 1 red bell pepper, sliced thin

● ¼ small purple cabbage, shredded

● 1/3 cup peanuts, crushed

● 1 lime, quartered

● Couple sprigs of fresh cilantro

 

Almond Pad Thai Sauce

Yield: 1.5 cups

Ingredients:

● ½ cup Almond Butter

● 2 tbsp soy sauce

● ½ lime, juiced

● 1 tsp chili paste or sambal (We used Chili Onion Crunch from Trader Joe’s)

● 1 tbsp rice vinegar

● ¼ cup water

Method: Combine all in a bowl and whisk until incorporated.

The How-To

1. Follow package instructions to cook Comrade Cluck, set aside.

2. Combine and whisk together ingredients for the Almond Pad Thai Sauce. Set aside.

3. Spiralize the zucchini and sweet potato, slice the red bell pepper, and shred the cabbage.

4. Build your jars in the following order: almond pad Thai sauce, Comrade Cluck, sweet potato noodles, zucchini noodles, sliced red bell pepper, shredded purple cabbage, crushed peanuts, cilantro, lime wedge.

5. Store in your refrigerator, eat within 2 days.

6. To eat: squeeze lime wedge, close jar, shake hard to distribute sauce, serve cold.
